Frisone

Recognised by its black-and-white coat, this breed is primarily selected for milk. In the butcher’s shop, each cut is assessed according to the animal and its ageing.

In the Basque Country, Txogitxu selects and ages distinctive meats. Discover this signature when available.

Black Pearl

A Lesage Prestige signature, Black Pearl is a selection of young heifers prized for their marbling and tenderness. Its profile favours balanced flavours over intensity. Cuts vary with deliveries.

Noire de Baltique

A beef selection carefully assessed for marbling and fat coverage. It is particularly suited to ageing, which can reveal meltingly tender meat and subtly woody aromas. Discover it according to the cuts available.
